Stew Meat

Beef stew meat comes from larger parts of a cow, such as the shoulder, chuck, or round. These cuts are ideal for stews because they contain more connective tissue, which breaks down and turns to gelatin when slow-cooked, resulting in tender flavorful dishes.

This is one of our favorites: Paleo Spiced Beef Soup with Chickpeas and Root Vegetables.

It has a lot of ingredients but it's worth the time.

REP PRODUCTS:
1 pound stew meat
4 cups beef bone broth

ADDITIONAL:
1-2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
3 parsnips, peeled and chopped
3 large carrots, peeled and diced
1 zucchini, chopped 1” pieces
1-14 oz can chickpeas, drained and rinsed
Salt and pepper, to taste
1/2 lemon, juice from
Garnish: fresh parsley, chopped

SEASONING:
1 tsp cumin
1 tsp coriander
1/2 tsp chili powder
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp cardamom
1/4 tsp turmeric
1 bay leaf

COOKING TOOLS:
Large, heavy bottom pot or Dutch oven
Strainer or colander

DIRECTIONS:
1. In a large pot, heat oil over medium heat. Season beef generously with salt, then sear beef to medium rare in batches. Set all beef aside.

2. Add a splash of broth and deglaze the pot, loosening the brown bits from the bottom. 

3. Sauté onion. Add garlic and sauté until fragrant. Add the spices and stir frequently for a minute. Add root vegetables (carrots, parsnips). Season with salt and pepper. Add beef and bone broth.

4. Bring to a boil, cover, then reduce heat; simmer on medium-low for 1 hour.

5. Add zucchini and chickpeas; cook for an additional hour until beef is tender to liking.

6. Squeeze in lemon juice, taste, and adjust the seasonings as necessary. Turn off heat and remove bay leaf. Garnish with parsley and serve hot.
