Ingredients
- 4 REP Pasture Raised Pork Chops
- ½ tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Olive Oil
- 1 tbsp Butter
- 3 Ripe Peaches, sliced
- 2 tbsp Brown Sugar
- 1 tsp Fresh Thyme
- ½ cup Chicken Broth
- Balsamic Glaze, for drizzling
Directions
- Season the chops. Pat REP pork chops dry with paper towels, then sprinkle both sides with salt and pepper.
- Sear them up. Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear about 5 minutes per side until golden brown and cooked through (internal temp 145°F). If they brown too fast, lower the heat. Remove from pan and set aside.
- Sweeten the peaches. While the pork is cooking, slice your peaches and toss them with brown sugar in a bowl.
- Make the sauce. Wipe out the skillet, then melt the butter. Add peaches and cook for 2–3 minutes until fragrant. Stir in the chicken stock and thyme, then let simmer 3–4 minutes until it reduces by half.
- Bring it all together. Nestle pork chops (and their juices) back into the pan to soak up the flavors.
- Finish strong. Serve warm with a drizzle of balsamic glaze and extra peach sauce spooned over the top.
