This is a great video on how to smoke the perfect beef short ribs.
We like to keep it simple and you really only need 3 things: • Beef Short ribs • Kosher Salt – 1/2 tsp per pound • Our Sea Salt & Smoked Paprika Rub
IMPORTANT COOKING INFO: For desired tenderness the ribs have to reach an internal temperature of 203˚. The fibers begin to breakdown after reaching 200˚ creating a more tender rib. NOTE: if you are smoking them around 225˚ the ribs will reach a plateau at 165˚. DO NOT rush them they will get to the desired temperature but requires major patience. Spritzing them periodically with some apple juice helps keep them moist. Enjoy.
