1. Let rest until it comes to room temperature.
2. Heat cast iron on high.
3. Add butter, ghee, or tallow and bast with rosemary, thyme, garlic, parsley.
4. Pat steak dry with a paper towel.
5. Season with salt and pepper.
6. Cook for 4 minutes each side.
7. Use a thermometer to check the temp of your steaks. Rare- 120 degrees, Medium-Rare- 130 degrees, Medium- 140 degrees.
8. Remove at desired temperature and rest for 5 minutes.
9. Slice thin against the grain. Serve.
