Beef heart, as the name suggests, comes from the cow’s heart. This nutrient-dense organ meat is rich in protein, iron, and essential vitamins. Its firm texture and robust flavor make it perfect for grilling, stewing, or adding to flavorful dishes.

Pan-Seared Beef Heart Recipe

Ingredients:
1 beef heart (about 1.5-2 lbs), cleaned and trimmed
3 garlic cloves, minced
2 tbsp olive oil or butter
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika (optional)
1 tsp dried thyme or rosemary (optional)
Juice of 1 lemon (optional)

Instructions:Prepare the Beef Heart:

Rinse the beef heart under cold water and pat it dry.

Trim off any silver skin, fat, and connective tissue. Slice the heart into thin strips (about 1/2 inch thick) for quicker cooking.

Season:
In a bowl, toss the sliced beef heart with salt, pepper, smoked paprika, and dried herbs if using. Let it sit for 10-15 minutes to absorb the flavors.

Sear:
Heat a skillet over medium-high heat and add olive oil or butter.

Once the oil is hot and shimmering, add the minced garlic and cook until fragrant (about 30 seconds).

Add the seasoned beef heart slices in a single layer. Cook for 2-3 minutes on each side until browned and just cooked through. Avoid overcooking, as the heart can become tough.

Optional Lemon Finish:
Remove the heart from the skillet and squeeze fresh lemon juice over it for added brightness.

Serve:
Serve immediately with a side of roasted vegetables, a fresh salad, or over rice or mashed potatoes.

Tips:
If you're new to cooking beef heart, consider marinating it in lemon juice, garlic, and olive oil for a few hours before cooking to tenderize it and enhance the flavor.

Don’t skip trimming; properly cleaned beef heart has a mild, beefy flavor and a tender texture.
