If you enjoy intense flavors, these fajitas won't disappoint. The fajita marinade is amazing. Plus, this is such an easy recipe. It's ready fast, so it's perfect for a weeknight dinner.
INGREDIENTS:
Happy Prairie Fajita Marinade
REP Regenerative Steak Strips or
REP Pasture-Raised Chicken Breasts
Green Peppers
Red Peppers
Onions
DIRECTIONS:
1: Thaw REP Steak Strips
2: Combine Steak Strips & Happy Prairie Fajita Marinade in Container for 4 hours minimum. We recommend marinating overnight. (Save a little sauce back for the veggies)
3: Set large cast iron skillet on high heat and sear REP steak strips for 2-3 minutes. Then reduce heat to low and simmer for 15 minutes
4: Slice green peppers, red peppers and onions. Put in skillet on high heat and pour in a little leftover marinade sauce.
5: Cook veggies for 2-3 minutes or until desired firmness. Make sure the pan is big enough so they cook properly instead of being steamed.
6: Assemble your fajitas with the toppings of your liking.
Optional Toppings: Cheese, sour cream, guacamole, salsa, tortillas.
