CHICKEN VERDE SOUP WITH GREEN CHILIS: (4-6 servings)
This bright green chicken chili is absolutely divine, perfectly spiced, and is so easy to make! You could even easily do this in a crockpot for extra ease. REP pasture-raised chicken breasts are cooked and shredded then simmered with Rep Classic Chicken Broth, green chilies, white beans, vegetables, and our REP seasonings that include true green hatch chilis. Garnish, garnish, garnish! A big warm bowl of slow-stewed, chicken green chili just screams for bright, cooling, contrasting toppings. I like to serve the garnishes on a big platter and have people help themselves. The fresh lime juice is not to be skipped!

With a serious (two-hour) simmer time, this hearty homemade, award-winning chili recipe invites us to spend a day cozy in the kitchen, close to the stove. Stirring occasionally while the house fills up with heady, savory smells—with all of your favorite people nearby, on the couch, or helping in the kitchen. Rep pasture-raised stew beef is simmered in Rep Classic Bone Broth, green peppers, onions and a REP custom seasoning blend loaded with authentic red chili powder. Expect bold aromas, Texas chili has the most amazing deep and rich flavor!

Who is Chef Contos?

Courtney Contos is a chef, National Board Certified Health & Wellness Coach, Functional Medicine Certified Health Coach, and speaker. She was raised and mentored in downtown Chicago under the expertise of her acclaimed restauranteur father, Bill Contos. He was the owner of Chez Paul - an ultra-elegant French restaurant and known in popular culture as the fancy restaurant from the iconic classic films Ferris Bueller’s Day Off and The Blue Brothers. "Chez Paul is where my love of food and appreciation for quality was born."

She carried on her father’s vision by working in restaurants and cooking schools until ultimately attaining her degree in culinary arts from Kendall Culinary School in Chicago. Courtney opened Chef Contos Kitchen & Store in Vermont, which was featured by Food & Wine Magazine as one of the best cooking schools in the world - focused on culinary education and chef-curated retail.

Amidst her successes, she struggled and suffered for years with chronic pain due to a diagnosis of rheumatoid arthritis. Her rheumatologist declared on numerous occasions that her condition would never change and that she would be wheelchair-bound for the rest of my life. Unwilling to accept this fate, she persevered to find a solution, and in 2018 - along with my Functional Medicine doctor, she set out to overcome her autoimmune disease. After decades of systemic inflammation, multiple health issues, and over six years of severe foot pain, she now takes pain-free steps with immense gratitude! 

Having been so positively impacted by her healing journey - she merged her rich experience as a culinary leader and educator with overcoming her autoimmune disease by becoming a certified Functional Medicine Wellness Coach. Courtney’s mission is to help others transform their health by guiding people in the right direction when they find themselves stuck without wellness support.
